400 g canned tomatoes
1/2 onion
2 cloves of garlic
200 ml vegetable broth
60 ml cream
1/4 tsp salt
1 pinch black pepper
Chef's tip: Blend in batches if your blender is small, and hold the lid with a towel to prevent hot soup from splashing.
Finely chop half an onion and mince 2 garlic cloves.
Place the chopped onion in a medium saucepan over medium heat with 2 tbsp of the vegetable broth. Cook, stirring, until the onion is soft and translucent, about 5 minutes.
Add the minced garlic and cook until fragrant, about 1 minute.
Add 400 g canned tomatoes and the remaining vegetable broth. Bring to a simmer, then reduce heat to low and cook uncovered for 10 minutes, stirring occasionally, until slightly thickened.
Remove from heat and carefully blend the soup until smooth using a blender.
Return the soup to the saucepan over low heat. Stir in 60 ml cream, 0.25 tsp salt, and a pinch of black pepper. Heat gently for 2 minutes until warmed through, without boiling.
