1 salmon fillet
200 g potatoes
100 g asparagus
1/2 lemon
1 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
2 tbsp water
Chef's tip: Cut potatoes into uniform 1 cm cubes so they roast evenly and finish at the same time as the salmon.
Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper.
Cut potatoes into 1 cm cubes. Toss with 0.5 tbsp olive oil, half the salt, and half the black pepper. Spread on the baking sheet and roast for 15 minutes.
While step 2 cooks
While the potatoes roast, trim asparagus and cut into 4 cm pieces. In a small bowl, mix remaining olive oil, salt, black pepper, and 2 tbsp water.
Remove the baking sheet from the oven. Push potatoes to one side. Place salmon fillet on the other side and arrange asparagus around it. Drizzle the oil-water mixture over salmon and asparagus. Squeeze lemon juice over everything.
Return the baking sheet to the oven and roast until salmon flakes easily and reaches 63°C (145°F) internal temperature, about 10 minutes.
Let the salmon rest for 2 minutes before serving.
