1 chicken breast
1 potato
1 carrot
1/2 onions
1 clove of garlic
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper

Preheat oven to 200°C (400°F). Peel and chop potatoes and carrots into bite-sized pieces. Slice onion into wedges. Mince garlic.
In a bowl, toss vegetables with olive oil, salt, and black pepper. Place in a baking dish.
Season chicken breast with salt and black pepper. Place on top of vegetables in the baking dish.
Roast in preheated oven for 25-30 minutes, until chicken reaches 74°C (165°F) and vegetables are tender.
Remove from oven, let rest for 3 minutes before serving.
