80 g pasta
200 g canned tomatoes
1 clove of garlic
50 g spinach
20 g parmesan
1/2 tsp salt
1/4 tsp black pepper
500 ml water
Chef's tip: Reserve some pasta water before draining; it helps the sauce cling to the pasta.
Chef's tip: For a silkier sauce, stir in the parmesan off the heat so it melts without clumping.
Bring 500 ml water to a boil in a large pan. Add salt and pasta, cook until al dente, about 8-10 minutes. Reserve 100 ml pasta water, then drain.
While step 1 cooks
While pasta cooks, mince garlic and grate parmesan. Set aside.
After draining pasta, return pan to low heat. Add canned tomatoes and garlic, simmer 3 minutes until slightly thickened.
Add spinach to the sauce, stir until wilted, about 1 minute.
Add cooked pasta and reserved pasta water to the sauce. Toss to coat, season with black pepper. Serve topped with parmesan.
