1 chicken breast
3 tbsp flour
1 egg
1/2 cup breadcrumbs
3 tbsp olive oil
1/4 tsp salt
1/8 tsp black pepper
Chef's tip: Press the breadcrumbs firmly onto the egg-coated chicken so the crust stays attached during frying.
Place the chicken breast between two sheets of plastic wrap and pound with a meat mallet or rolling pin until evenly about 1 cm thick.
Set up three shallow bowls: one with 3 tbsp flour, one with 1 beaten egg, and one with 0.5 cup breadcrumbs mixed with 0.25 tsp salt and 0.125 tsp black pepper.
Dredge the pounded chicken breast in the flour, shaking off excess, then dip into the beaten egg, and finally press into the breadcrumb mixture to coat evenly.
Heat 3 tbsp olive oil in a non-stick skillet over medium-high heat until shimmering.
Carefully lay the breaded chicken breast in the skillet and cook until the bottom is deep golden brown and crisp, about 4 minutes.
Flip with tongs and cook until the second side is golden brown and the internal temperature reaches 74°C/165°F, about 4 minutes more.
Transfer to paper towels to drain briefly, then serve immediately.
