Cook beef mince until it reaches an internal temperature of 71°C (160°F).

150 g beef mince
75 g bell pepper
50 g onion
5 g garlic
100 g tomatoes
30 g cheddar
1 tbsp olive oil
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
2 tortillas
Chef's tip: If the skillet gets dry while cooking the beef, add a tablespoon of water (from the allowed list) to deglaze.
Dice the onion and bell pepper into 1 cm pieces. Mince the garlic. Grate the cheddar. Dice the tomatoes into 1 cm cubes.
Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, cook for 3 minutes until softened.
Add the garlic and beef mince to the skillet. Cook, breaking up the meat, for 5 minutes until browned.
Stir in the tomatoes, cumin, paprika, salt, and black pepper. Cook for 2 minutes until tomatoes break down and mixture thickens slightly.

While the beef mixture simmers, warm the tortillas in a dry skillet over low heat for 1 minute per side.
Fill the warm tortillas with the beef mixture, top with grated cheddar, and serve.
