80 g pasta
200 g canned tomatoes
1/2 onion
2 cloves of garlic
1 tbsp olive oil
20 g parmesan
1/2 tsp salt
1/4 tsp black pepper
1 l water
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water, then drain.
While step 1 cooks
While the pasta cooks, heat olive oil in a skillet over medium heat. Add the onion, finely chopped, and cook until soft, about 3 minutes. Add the garlic, minced, and cook for 1 minute until fragrant.
Add the canned tomatoes to the skillet, breaking them up with a spoon. Season with salt and black pepper. Simmer for 5 minutes until slightly thickened.
Add the drained pasta to the skillet with the sauce. Toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce. Cook for 1 minute to combine.
Remove from heat and stir in the grated parmesan until melted. Serve immediately.
