Instructions
-
Heat the oven to 200°C and line a baking tray with parchment paper.
~10 min
-
Cut the puff pastry into thin strips about 1 cm wide and 15 cm long.
~3 min
Thin, even strips bake at the same rate as the sausage, so the pastry crisps through instead of staying raw and doughy.
-
Wrap each sausage with 3 to 4 pastry strips in a crisscross pattern, leaving a small gap near one end for the mummy's face. Press the strip ends gently onto the pastry to seal.
~8 min
Pressing the ends down anchors the strips so they don't unravel and spring open as the pastry puffs in the oven.
Keep the pastry strips cold until wrapping; warm pastry stretches and tears, so work quickly and return any unused strips to the fridge.
Leave a small uncovered patch of sausage at one end so the mummy has a face, and do not overlap the strips too thickly or the pastry under the overlaps stays pale and soft.
-
Arrange the wrapped sausages on the lined tray, spacing them 2 cm apart. Beat the egg in a small bowl with a fork and brush it over the pastry. Season the pastry lightly with the salt and black pepper.
~4 min
Egg wash gives the pastry a glossy, deep golden crust, and the gaps let hot air circulate so the sides crisp rather than steam.
Basting Brush the egg wash in a thin, even coat over every exposed bit of pastry; puddles in the folds bake unevenly and leave pale, soggy patches.
-
Bake until the pastry is puffed and golden and the sausages reach 71°C/160°F in the center, about 25 minutes.
~25 min
Puff pastry needs a hot oven so its trapped water turns to steam and lifts the layers before the crust sets.
Roasting Give the tray space and a fully preheated oven so the pastry puffs and browns; opening the door early lets the steam escape and the layers collapse.

While step 5 cooks
