Instructions
-
Rinse the strawberries under cold water and pat them completely dry with a kitchen towel. Leave the green tops on for holding.
~4 min
Any water left on the fruit makes melted chocolate seize, turning it dull and grainy instead of glossy.
-
Chop the dark chocolate into small pieces and put them in a small heatproof bowl. Set the bowl in a larger bowl of hot tap water and stir gently until the chocolate is fully melted and glossy, about 5 minutes. Stir in a pinch of salt.
~5 min
Gentle indirect heat melts chocolate evenly without scorching it, and small pieces melt faster and more uniformly.
-
While step 2 waits
While the chocolate melts, pour 100 ml cream into a small bowl and whisk it to soft, droopy peaks, about 3 minutes. Keep it cool.
~3 min
Whisking incorporates air into the cream; stopping at soft peaks keeps it fluid enough to spoon rather than stiff and grainy.
Whisking Whisk with a steady wrist and lift the whisk to check the peaks; stop while they still droop softly, since overwhisking turns cream grainy.
-
Hold each strawberry by its green top and dip it about two-thirds into the melted chocolate. Let the excess drip back into the bowl, then set the strawberry on a plate lined with parchment paper.
~5 min
Letting the excess drip off gives a thin, even shell instead of a thick pool that sets unevenly.
Make sure the strawberries are bone dry before dipping. Any water on the surface makes the melted chocolate seize and turn dull and grainy.
-
Let the chocolate set on the strawberries for 2 minutes, then serve them with the whipped cream.
