Instructions
-
Heat the oven to 180°C. Brush the baking dish with the olive oil, coating the base and sides so the frittata releases cleanly.
~5 min
-
Trim and thinly slice the spring onions. Pick the mint leaves and chop them finely. Crumble the feta into rough 1 cm pieces.
~5 min
-
Crack the eggs into the mixing bowl, add the salt and black pepper, and whisk until the yolks and whites are fully combined and slightly frothy.
~3 min
Whisking incorporates air and fully blends yolk and white, so the frittata sets evenly and stays light rather than streaky.
Whisking Whisk briskly in a circular motion, lifting the whisk to incorporate air, until the mixture is uniform and slightly frothy; stop before over-whisking, which can create too many bubbles.
-
Stir the sliced spring onions, chopped mint, peas and three quarters of the crumbled feta into the eggs. Pour the mixture into the oiled dish and scatter the remaining feta over the top.
~2 min
Scatter the reserved feta on top rather than folding it all in, so some pieces stay on the surface and brown lightly for a savoury contrast.
Folding Use a gentle folding motion to combine the vegetables and feta into the eggs, scraping the bottom and turning over, so you don't deflate the mixture.
-
Bake until the frittata is set around the edges and the centre barely wobbles when you nudge the dish, 20 to 25 minutes. If the centre still looks wet, bake 3 to 5 minutes more.
~30 min
Egg proteins set at about 71°C; pulling it out while the centre still wobbles lets carryover heat finish cooking, preventing a rubbery texture.
Pull the dish from the oven while the very centre still has a slight wobble: the residual heat finishes setting the eggs and keeps the texture tender rather than rubbery.
-
Let the frittata stand in the dish for a few minutes, then run a knife around the edge and slide it out. Cut into wedges and serve warm or at room temperature.
~5 min
A brief rest lets the egg proteins relax and firm up, so the frittata slices cleanly without tearing.
