Instructions
-
Trim the rhubarb and cut it into 2 cm pieces. Peel and finely grate the ginger.
~6 min
Grate the ginger very finely so no fibrous strands interrupt the soft compote.
-
Put the rhubarb, sugar, grated ginger and a pinch of salt in the small saucepan over medium heat. Cook, stirring now and then, until the rhubarb collapses into a thick compote and the liquid has reduced, about 10 minutes.
~10 min
Sugar draws juice from the rhubarb and the gentle simmer evaporates that liquid, concentrating flavour and thickening the compote so it doesn't water down the yogurt.
Simmering Keep the heat at a gentle bubble and stir occasionally so the rhubarb breaks down evenly without scorching; stop when the liquid is syrupy, not watery.
-
While step 2 cooks
While the rhubarb cooks, toast the oats in the dry frying pan over medium heat, shaking the pan, until they smell nutty and turn light golden, 4 to 5 minutes. Tip onto a plate to cool.
~5 min
Dry heat browns the oats through the Maillard reaction, building nutty flavour and driving off moisture so they stay crisp against the compote.
Toast the oats in a dry pan and cool them fully before layering, otherwise the steam from the warm rhubarb softens their crunch.
Toasting spices Use a dry pan over medium heat and keep shaking so the oats colour evenly; pull them at light golden and nutty, as they turn bitter fast.
-
Take the rhubarb off the heat and let it stand until warm rather than hot, about 10 minutes, so it does not thin the yogurt.
~10 min
Hot compote would warm the yogurt, thinning its body and speeding spoilage; letting it cool keeps the layers distinct and the yogurt fresh.
-
Spoon half the yogurt into each glass, add a layer of rhubarb compote, then repeat with the remaining yogurt and compote. Scatter the toasted oats over the top and serve.
