Roughly chop the almonds into 5 mm pieces. In the mixing bowl, stir the rolled oats, chopped almonds, pumpkin seeds, ground cinnamon and salt with the coconut oil and maple syrup until every oat is coated and the mixture looks like damp sand.

Toasting spices Stir cinnamon into the oat mixture before baking to bloom its flavor in the hot oven. Watch closely to avoid burning.

Spread the oat mixture on the lined baking sheet in one even layer, pressing it down lightly. Bake for 10 minutes, then stir and press it flat again. Bake 8-10 minutes more, until the oats and almonds are golden brown and crisp.
