Instructions
-
Hull the strawberries and cut them into 1 cm pieces. Put 300 g of the strawberries in a bowl and mash them lightly with a fork until juicy but still chunky. Slice the remaining 100 g and set aside for layering.
~5 min
Light mashing releases juices that ripple through the cream, while leaving chunks keeps texture instead of turning the fruit to purée.
If your strawberries are pale or underripe, mash them with the sugar first and let them sit for 5 minutes so the sugar draws out their juice before folding.
-
Pour 300 ml cream into a large mixing bowl and add 1 tbsp sugar. Whip with an electric whisk or balloon whisk until soft peaks form, about 3 minutes. Stop while the cream still droops from the whisk; overwhipped cream turns grainy.
~3 min
Whipping incorporates air into the cream; stopping at soft peaks keeps it smooth, because overwhipping breaks the fat and makes it grainy.
Whisking Whip steadily and stop at soft peaks, when the cream droops from the whisk; pushing past that breaks the fat and turns it grainy.
-
Break 100 g meringue into rough 2 cm pieces with your hands, keeping some larger shards for texture.
~2 min
-
Fold the mashed strawberries into the whipped cream with a spoon, 3 or 4 turns only, so the mixture stays rippled rather than uniform. Fold in three quarters of the meringue pieces the same way.
~2 min
Gentle folding preserves the air in the whipped cream, while stirring would deflate it and leave the dessert dense and flat.
Fold the meringue in at the last moment and serve immediately: the sugar in the meringue draws moisture from the cream and softens it within about 30 minutes.
Folding Use a spoon to turn the mixture over gently, just 3 or 4 times; stop while streaks remain so you keep the air and the ripple.
-
Spoon the mixture into glasses or a large bowl, layering in the reserved sliced strawberries and the remaining meringue pieces as you go. Serve straight away while the meringue still has crunch.
~2 min
Meringue softens as it absorbs moisture from the cream, so serving immediately keeps the shards crisp for contrast.
