Instructions
-
Heat the oven to 200°C. Peel the onions, cut them in half and slice into 5 mm half-moons.
~10 min
-
Spread the onions on a large baking tray, dot with the butter and season with the salt and black pepper. Roast for 25 minutes until softened and starting to colour.
~25 min
A single, uncrowded layer lets moisture escape so the onions brown and sweeten instead of steaming.
Roast the onions in a single layer with space between them so their edges caramelise rather than steam, which is where the deep soup flavour comes from.
Caramelizing Keep the onions in a single layer and let their edges turn deep golden before stirring; crowding or stirring too often traps steam and they soften without sweetening.
-
Pour the white wine over the onions, stir to loosen any browned edges and roast another 25 minutes until the onions are golden and the wine has almost evaporated.
~25 min
The wine deglazes the tray, dissolving the browned bits, and its alcohol and acidity deepen the caramelised flavour as it cooks off.
Caramelizing Keep the onions in a single layer and let their edges turn deep golden before stirring; crowding or stirring too often traps steam and they soften without sweetening.
Deglazing Pour the wine in and scrape the browned bits off the tray with a spoon; those stuck edges hold the most flavour and dissolve into the liquid.

While step 3 cooks
While the onions roast, warm the beef stock in a small ovenproof pot in the oven for 15 minutes, then keep it hot. Slice the baguette into 8 thick diagonal slices and grate the gruyere.
~15 min
-
Lay the baguette slices on a baking tray and toast in the oven for 6 minutes until crisp and lightly golden.
~6 min
Toasting first drives out moisture, so the bread stays crisp under the onions and cheese instead of going soggy.
-
Spoon the roasted onions onto the toasted baguette slices, top generously with the grated gruyere and return to the oven for 8 to 10 minutes until the cheese is melted and bubbling at the edges.
~10 min
If the gruyere browns before it fully melts, move the tray to a lower shelf rather than turning up the heat, so the toast does not burn.
-
Ladle the hot beef stock into bowls and serve alongside the melts for dipping.
