Instructions
-
Peel the potatoes and cut them into 1.5 cm cubes. Peel the onion and slice it thinly.
~6 min
-
Heat 1 tbsp olive oil in a 20 cm oven-safe non-stick pan over medium heat. Add the onion and cook for 5 minutes until soft and translucent, stirring now and then.
~5 min
Sweating onions slowly in oil softens them and releases sweetness without browning, building a gentle base flavour.
Sweating Cook onions gently over medium heat until soft and translucent, not browned. If they start to colour, lower the heat; browning makes them bitter.
-
Add the potato cubes and 100 ml water to the pan. Cover and cook for 8 minutes until the potatoes are tender when pierced with a knife and the water has evaporated.
~8 min
Covering traps steam so the potatoes cook evenly and tender; the water evaporates, preventing them from frying or sticking.
-
While step 3 cooks
While the potatoes cook, crack the eggs into a bowl, add the salt and beat with a fork until evenly combined.
~2 min
-
Heat the grill to high. Spread the potato and onion mixture evenly in the pan, pour over the beaten eggs and cook for 4 minutes until the edges set.
~4 min
Cooking gently on the hob sets the base so the frittata holds together before it goes under the grill.
Let the pan cool slightly before adding the eggs so they do not set too fast at the edges while the centre stays raw.
-
Transfer the pan to the grill and cook for 3 minutes until the top is set and lightly golden. Slide onto a plate and serve.
~3 min
Grill heat sets the top and browns it without overcooking the base, giving a golden finish.
If the frittata is browning too quickly under the grill, move the pan to a lower shelf and check every minute.
Grilling Grill close to the heat until the top is set and golden, watching closely. If it browns too fast, move the pan lower and check every minute.
