Instructions
-
Rinse the rice under cold running water until the water runs mostly clear, then drain well. Add the rice and 160 ml water to a small saucepan and bring to a boil over high heat.
~5 min
Rinsing removes excess surface starch so the cooked grains stay separate instead of turning gluey.
Absorption rice Use a tight lid and low heat, and don't stir; lift the lid only when the water is gone, then rest off-heat so the grains finish evenly.
-
Reduce the heat to low, cover the saucepan, and cook until the water is absorbed and the rice is tender, about 15 minutes. Remove from the heat and let it stand, covered, for 5 minutes.
~20 min
Covered, off-heat standing lets residual steam finish the grains and equalize texture without scorching.

While step 2 cooks
While the rice cooks, stir the soy sauce and honey together in a small bowl until the honey dissolves. Pat the salmon dry with paper towel and set it on a plate.

-
Heat a non-stick skillet over medium-high heat. Place the salmon in the pan skin-side down and sear undisturbed until the skin is crisp and releases easily, about 4 minutes. Flip and cook until the flesh is opaque at the edges, about 2 minutes more.
~6 min
Dry skin and a hot pan drive off surface moisture fast, so the skin browns and crisps instead of steaming.
Dry the salmon skin thoroughly before it hits the pan. Any surface moisture steams the fish instead of searing it, and you lose the crisp skin and the browned fond that gives the glaze its depth.
Searing Pat the fish bone-dry and leave it undisturbed until the skin releases on its own; moving it early tears the skin and kills the crust.
-
Reduce the heat to medium-low. Pour the soy sauce and honey mixture into the pan around the salmon. Simmer, spooning the glaze over the fish, until it thickens enough to coat the back of a spoon, about 2 minutes. The salmon should reach 63°C in the thickest part.
~2 min
Simmering concentrates the glaze and the honey's sugars thicken it so it clings to the fish.
-
Fluff the rice with a fork and spoon it onto a plate. Set the salmon on top and pour the remaining pan glaze over the fish.
