Instructions
-
Roughly chop the almonds into coarse pieces. Quarter the figs lengthwise into wedges.
~3 min
-
Warm the small frying pan over medium heat, add the oats and chopped almonds and toast, stirring often, until the oats smell nutty and the almonds are golden at the edges, about 4 minutes. Stir in the olive oil and a pinch of salt, toss for 30 seconds, then tip onto a plate to cool.
~4 min
Toasting dry first drives off moisture so the oats and almonds brown evenly and turn crisp, while the oil added later carries the salt.
Toast the oats and almonds dry before adding the olive oil: the dry pan lets them brown evenly and the oil then carries the salt so every spoonful is seasoned.
Toasting spices Keep the pan at medium heat and stir often; pull the oats and almonds as soon as they smell nutty and turn golden, since they go from toasted to burnt in seconds.
-
While step 2 cooks
While the oats toast, spoon the Greek yogurt into two glasses or bowls, dividing it evenly.
~1 min
-
Return the pan to medium heat, add the fig wedges and 2 tbsp of the honey and cook until the figs soften slightly and the honey bubbles and coats them, about 2 minutes.
~2 min
Brief heat softens the figs and thins the honey so it glazes them, but cooking it longer darkens the honey and makes it bitter.
Warm the honey with the figs only briefly. If it bubbles hard for longer the honey darkens and turns bitter, so pull the pan off as soon as the figs glisten.
Caramelizing Cook the figs and honey just until the honey bubbles and coats them; stop as soon as they glisten so the sugars don't darken and turn bitter.
-
Spoon the warm figs and honey over the yogurt, scatter the toasted oats and almonds on top and drizzle with the remaining 1 tbsp honey. Serve straight away.
~2 min
Serving at once keeps the toasted oats crunchy and stops them going soggy in the warm honey and yogurt.
