Instructions
-
Spoon the greek yogurt into a small bowl. Add the peanut butter, honey and a pinch of salt, then stir with a fork until the mixture is smooth and evenly coloured.
~3 min
Stirring the peanut butter into the yogurt with honey and salt creates a stable emulsion, so the mixture stays smooth instead of separating.
The pinch of salt is not optional here: it sharpens the peanut butter and keeps the jar from tasting flat after chilling.
Seasoning in layers Season each component as you build: salt the yogurt base, then layer oats and banana so every spoonful is balanced. Taste before sealing the jar.
-
Slice the banana into 1 cm rounds. Set a few slices aside for the top and roughly mash the rest with the back of the fork.
~2 min
-
Fold the mashed banana through the peanut butter yogurt until it loosens into a soft, creamy mixture. Taste it: it should be lightly sweet with a clear peanut edge.
~1 min
Mashing the banana releases its natural sugars and moisture, which sweetens and loosens the yogurt without added liquid.
Folding Use a spatula to cut down through the mixture and lift it over gently. Stop as soon as the banana is just combined; overmixing will deflate the creamy texture.
-
Spoon half the oats into the bottom of the jar, add the yogurt mixture, then scatter the remaining oats on top. Press the reserved banana slices into the surface.
~2 min
Layering oats at the bottom and top lets them soften in the fridge while keeping some texture on top.
Seasoning in layers Season each component as you build: salt the yogurt base, then layer oats and banana so every spoonful is balanced. Taste before sealing the jar.
-
Seal the jar and keep it in the fridge until you leave for work. Eat it cold straight from the jar, or let it sit at room temperature for 10 minutes if you prefer it softer.
~10 min
Chilling lets the oats hydrate and the flavors meld, so the jar tastes fuller and the texture thickens overnight.
