Instructions
-
In a small bowl, stir together 1.5 tbsp soy sauce, 1 tbsp honey, and 1 grated garlic clove until the honey dissolves into a smooth, glossy glaze.
~3 min
Dissolving honey in soy sauce creates a smooth glaze that coats evenly instead of clumping.
-
Pat the 200 g salmon dry with paper towel and season both sides with the 0.25 tsp salt and 0.25 tsp black pepper. Cut the 150 g broccoli into 3 cm florets and toss them with 1 tsp olive oil.
~5 min
Drying the salmon ensures the glaze adheres and the surface browns rather than steams.
If the broccoli florets are large, halve them so they cook through in the same time as the salmon.
-
Brush the salmon all over with half the glaze. Place the salmon skin-side down in the air fryer basket and scatter the broccoli around it. Air fry at 190°C for 8 minutes.
~8 min
Brushing only half the glaze now prevents the honey from burning during the longer initial cook.
Roasting Arrange salmon and broccoli in a single layer with space between pieces so hot air circulates and they brown instead of steam.
-
Brush the salmon with the remaining glaze. Air fry at 190°C for 5 to 6 more minutes, until the glaze is sticky and darkened at the edges and the salmon flakes easily and reaches 63°C at the thickest point.
~6 min
The second glaze coat added late stays sticky and darkens without turning bitter from burning.
Brush the second coat of glaze on only for the final minutes: honey burns quickly, and a late coat stays sticky instead of turning bitter.
Caramelizing Watch for the glaze to turn sticky and darkened at the edges; pull it before it blackens, as honey sugars burn fast.
Roasting Arrange salmon and broccoli in a single layer with space between pieces so hot air circulates and they brown instead of steam.
-
Use tongs to lift the salmon and broccoli onto a plate. Spoon any glaze pooled in the basket over the top and serve hot.
