Instructions
-
Soak the dried chickpeas in 250 ml water for at least 4 hours or overnight, then drain.
~240 min
Soaking softens the chickpeas by hydrating them, ensuring they cook evenly and become tender.
-
Drain the soaked chickpeas and set aside. Finely chop the onion. Rinse the rice under cold water until the water runs clear, then drain well.
~10 min
Rinsing removes surface starch so the rice grains stay separate instead of turning gluey.
-
Set the pressure cooker to the sauté setting and add 1 tbsp oil. Add the chopped onion and cook for 5 minutes, stirring, until soft and lightly golden.
~5 min
Sautéing onions in oil develops sweetness and a golden flavor base through gentle caramelization.
-
Add 1 tsp garam masala to the onion and stir for 30 seconds until fragrant. Add 100 g canned tomatoes and cook for 2 minutes, scraping up the browned bits.
~2 min
Blooming garam masala in hot oil dissolves its fat-soluble aromas, making the spice flavor more intense.
Toasting the garam masala in the oil for just 30 seconds wakes up its aroma; any longer and it turns bitter.
Blooming spices Add ground spices to hot oil and stir constantly for 30 seconds until fragrant; pull off the heat before they darken, as they burn quickly.
-
Add the drained chickpeas, rinsed rice, 150 ml water, 0.5 tsp salt and 0.25 tsp black pepper. Stir, lock the lid and cook on high pressure for 12 minutes.
~12 min
High pressure raises the boiling point, allowing the rice and chickpeas to cook quickly and evenly.
Absorption rice Use the right water ratio and let the rice rest covered after cooking so grains absorb remaining moisture and firm up.
-
Release the pressure naturally for 5 minutes, then carefully quick-release any remaining pressure. Stir in 60 g spinach until wilted. Rest covered for 5 minutes before serving.
~10 min
Natural release prevents starchy liquid from erupting; residual heat finishes cooking the rice gently.
If the rice looks wet after resting, leave the lid off for 2 minutes to let excess moisture escape.
Absorption rice Use the right water ratio and let the rice rest covered after cooking so grains absorb remaining moisture and firm up.
