Instructions
-
Put the new potatoes in a large pot, cover with water and add 1 tsp salt. Bring to a boil and cook for 12 minutes, until a knife slides in easily.
~12 min
Starting the potatoes in cold salted water lets them cook evenly from the outside in, so the centers turn tender without the skins splitting.
-
While step 1 cooks
While the potatoes boil, trim the green beans and finely grate the zest of the lemon, then cut the lemon in half. Peel and thinly slice the garlic and finely chop the rosemary.
~5 min
-
Add the green beans to the pot with the potatoes and cook for 4 minutes, until just tender but still bright. Drain both in a colander and return them to the pot.
~4 min
Boiling the beans briefly sets their bright color and keeps a slight bite, since they finish cooking in the residual heat of the drained pot.
-
Pat the lamb chops dry and season both sides with the remaining 1/4 tsp salt and the black pepper. Heat the olive oil in a large frying pan over medium-high heat until it shimmers.
~3 min
A dry surface is essential for browning: any moisture must steam off first, and a shimmering pan means the oil is hot enough to sear rather than stew.
Searing Get the pan properly hot and leave the chops undisturbed so a deep brown crust forms; crowding the pan or moving them too soon steams the meat instead of browning it.
-
Sear the lamb chops in a single layer for 3 minutes per side, until browned and an instant-read thermometer reads 54°C in the thickest part for medium-rare. Transfer to a plate and rest for 5 minutes.
~11 min
Resting lets the contracted muscle fibers relax so the juices redistribute through the meat instead of running out onto the plate.
Let the chops rest before slicing so the juices stay in the meat, and spoon the pan sauce over them at the table rather than letting them sit in it.
Searing Get the pan properly hot and leave the chops undisturbed so a deep brown crust forms; crowding the pan or moving them too soon steams the meat instead of browning it.
-
Lower the heat to medium, add the garlic and rosemary to the pan and cook for 30 seconds, until fragrant. Add the juice of half the lemon and 3 tbsp water, scrape up the browned bits and simmer for 1 minute.
~1 min
The lemon juice and water dissolve the browned fond left by the chops, and simmering concentrates those flavors into a glossy sauce.
Scrape the browned bits from the pan with the lemon juice and water while it is still hot; that fond is where the sauce gets its depth.
Pan sauce Deglaze while the pan is still hot, scraping up every browned bit, then simmer briefly so the sauce thickens enough to coat a spoon without turning greasy.
-
Toss the drained potatoes and green beans with the lemon zest and the juice of the remaining lemon half. Serve the rested lamb chops with the vegetables and spoon the pan sauce over the top.
