Instructions
-
Heat the barbecue to medium-hot, about 200°C, with the lid down. Meanwhile, peel and finely chop the garlic, finely chop the parsley, and finely grate the zest of the lemon. Cut the lemon in half.
~5 min
Zesting Grate only the yellow zest, stopping before the bitter white pith; a fine grater releases more aroma than a coarse one.
-
Mix the chopped garlic, lemon zest, 1 tbsp of the olive oil, half the chopped parsley, the salt and the black pepper in a small bowl to make a loose paste.
~2 min
Letting the garlic and zest sit in the oil draws out their aroma and softens the raw bite before it hits the heat.
-
Pat the prawns dry and toss them with the remaining 1 tbsp olive oil. Thread them onto skewers or place them in a single layer on the barbecue grill and cook for 2 minutes per side, until pink and opaque all the way through.
~4 min
Drying the prawns first stops them steaming, so the hot grill can brown them quickly instead of leaving them rubbery.
Grilling Keep the grill medium-hot and turn the bread often; watch for light char at the edges, since garlic oil burns before the crumb crisps.
-
While step 3 cooks
While the prawns cook, brush the bread slices on both sides with a little of the garlic oil from the bowl and grill them for 1 to 2 minutes per side, until crisp and lightly charred at the edges.
~4 min
The oiled bread crisps and chars fast, giving a crunchy base that won't go soggy under the juicy prawns.
Grill the bread on a cooler edge of the barbecue and turn it often: the garlic oil catches quickly and can scorch before the bread crisps.

-
Pile the grilled prawns onto the toasted bread, spoon over the garlic and parsley mixture, and squeeze over lemon juice to taste. Scatter with the remaining chopped parsley and serve at once.
~3 min
The raw garlic-parsley mix and fresh lemon juice are added off the heat so they stay bright and pungent rather than cooking dull.
