Instructions
-
Rinse the 80 g rice under cold water until it runs clear, then drain well. Dice the peppers into 1 cm pieces. Zest the lime into a small bowl, then cut the lime in half and squeeze 1 tbsp juice into the same bowl. Pat the 150 g tilapia fillets dry and season both sides with 1 tsp cajun seasoning, 0.25 tsp salt and 0.25 tsp black pepper.
~8 min
Rinsing removes surface starch so the grains stay separate instead of turning gluey; drying fish helps seasoning adhere and promotes browning.
-
Heat 1 tbsp oil in a small pot over medium heat. Add the diced peppers and cook, stirring, until softened and lightly golden at the edges, about 5 minutes. Stir in the rice and the remaining 0.5 tsp cajun seasoning and toast for 1 minute until the grains smell nutty.
~6 min
Toasting the rice in hot oil coats each grain in fat, keeping it separate and building a nutty flavor through browning.
Toast the rice in the spiced oil for a full minute before adding water: the grains turn glossy and smell nutty, which keeps the pilaf from tasting flat.
-
Pour in 150 ml water and bring to a boil. Cover, drop the heat to low, and simmer until the water is absorbed and the rice is tender, 15 to 18 minutes. Do not stir while it cooks.
~18 min
Absorption cooking lets the rice soak up exactly the measured water; leaving the lid on traps steam so grains cook evenly.
Absorption rice Use the right water ratio, bring to a boil, then cover and cook undisturbed on low. Lifting the lid or stirring releases steam and makes the rice gummy.
-
While step 3 cooks
While the rice simmers, heat a non-stick skillet over medium-high heat. Lay in the seasoned tilapia fillets and cook until the underside is golden and releases easily, about 4 minutes. Flip and cook until the fish is opaque and flakes at the thickest point, 3 to 4 more minutes.
~4 min
Cooking the first side undisturbed lets a browned crust form and the protein release cleanly from the pan.
Searing Pat the fish dry and use medium-high heat; leave it untouched until it releases on its own. Moving it too early tears the crust and sticks.
-
Fluff the rice with a fork and fold in the lime zest and juice. Set the seared tilapia on top, cover the pot, and let everything rest off the heat for 5 minutes so the flavours settle and the fish finishes gently.
~5 min
Resting off the heat lets the fish finish gently and the lime flavor absorb without cooking off its brightness.
Add the lime zest and juice only after the pot is off the heat. Cooking lime dulls its brightness, and the raw squeeze at the end is what lifts the cajun spice.
