Instructions
-
Cut the potatoes into 3 cm chunks and put them in a medium pot. Cover with cold water by 2 cm, add 1 tsp salt, and bring to a boil. Simmer 12 to 15 minutes, until a knife slides in with no resistance. Drain in a colander and let steam-dry 2 minutes.
~17 min
Starting potatoes in cold water ensures even cooking from the outside in, preventing a raw center while the exterior turns mushy.

While step 1 cooks
While the potatoes cook, trim the green beans and pat the salmon pieces completely dry with paper towels. Season the salmon on both sides with 1/4 tsp salt and 1/4 tsp black pepper.
~4 min
-
Heat 1 tbsp olive oil in a large non-stick pan over medium-high until it shimmers. Add the salmon pieces skin-side down and press gently with a spatula for 10 seconds so the skin stays flat. Sear undisturbed 5 to 6 minutes, until the skin is deep golden and releases easily.
~6 min
A hot pan and dry skin create immediate moisture evaporation, allowing the skin to crisp and brown through the Maillard reaction instead of steaming.
Dry the salmon skin thoroughly and start it in a hot pan: any surface moisture steams the skin instead of crisping it.
Searing Get the pan hot and the protein dry; press skin-side down for full contact. Don't move it until it releases easily, that's when the crust is set.
-
Flip the salmon and cook 2 to 3 minutes more, until the thickest part reaches 63°C and the flesh flakes. Move the salmon to a plate and rest 5 minutes.
~8 min
Carryover cooking raises the internal temperature a few degrees after removal, so resting prevents overcooking and keeps the salmon moist.
Searing Get the pan hot and the protein dry; press skin-side down for full contact. Don't move it until it releases easily, that's when the crust is set.
Resting meat Rest salmon for 5 minutes after cooking so juices redistribute. Cutting too early lets moisture escape and dries the flesh.
-
Add the remaining 1 tbsp olive oil to the same pan over medium-high. Add the potatoes and press them flat with the spatula. Cook 6 to 8 minutes without stirring, until the undersides are deeply golden and crisp, then turn and cook 3 to 4 minutes more. Season with 1/4 tsp salt and the remaining 1/4 tsp black pepper and transfer to a warm plate.
~12 min
Pressing the potatoes flat maximizes surface contact with the hot pan, creating a deep golden crust through Maillard browning.
-
Add the green beans to the pan with 100 ml water. Cover and cook 4 to 5 minutes, until the beans are bright green and just tender but still snappy. Push the beans to one side, return the salmon to the pan, and spoon the pan juices over the fillets. Serve immediately.
~5 min
Covering the pan traps steam, cooking the green beans quickly so they stay bright green and crisp-tender rather than dull and soft.
