Instructions
-
Rinse the rice under cold running water until it runs mostly clear, then drain well. Put it in the small saucepan with 150 ml water and a pinch of the salt. Bring to a boil over high heat, then cover, drop the heat to low and cook until the water is absorbed and the grains are tender, about 10 minutes.
~10 min
Rinsing removes surface starch so the grains stay separate instead of turning gluey; covering traps steam to cook them evenly.
Absorption rice Keep the lid on and the heat low so steam, not stirring, cooks the rice; lift the lid only to check that the water is gone.
-
While step 1 cooks
While the rice cooks, peel and finely chop the garlic. Separate the lettuce leaves, rinse them, and tear or slice into bite-sized pieces. Measure the soy sauce.

Heat the oil in the non-stick frying pan over high heat until it shimmers. Add the beef mince, press it into a single even layer, and leave it undisturbed for 2 minutes so it browns. Break it into small pieces and continue cooking until no pink remains and the edges are browned, about 3 minutes more.
~5 min
Pressing the beef into one layer and leaving it untouched lets the surface dry and brown via Maillard, building savory flavor.
Let the beef sit untouched in the hot pan for the first two minutes; that dry contact is what builds the browned crust and the savory depth of the glaze.
Searing Use high heat and a dry surface, then leave the meat untouched until it releases easily; moving it too early steams it gray instead of browning.
-
Reduce the heat to medium, add the garlic and cook, stirring, until fragrant, about 30 seconds. Pour in the soy sauce and stir for 1 minute until the beef is glossy and the liquid has mostly reduced. Season with the black pepper and the remaining salt.
~1 min
Garlic burns quickly at high heat, so lowering the heat lets it turn fragrant and sweet without turning bitter.
If the soy sauce reduces too far and sticks, loosen the pan with a spoonful of the rice cooking water instead of more oil.
-
Take the rice off the heat and let it stand, covered, for 2 minutes, then fluff it with a fork.
~2 min
Resting covered lets residual steam finish the grains and firm them so fluffing separates rather than mashes them.
Absorption rice Keep the lid on and the heat low so steam, not stirring, cooks the rice; lift the lid only to check that the water is gone.
-
Spoon the rice into a bowl, top with the glazed beef, and add the lettuce alongside. Serve right away.
