Instructions
-
Pat the salmon fillet dry with paper towel and season both sides with 0.25 tsp salt and 0.25 tsp black pepper. Trim the woody ends off the asparagus. Mince the 3 garlic cloves. Zest the lemon half and squeeze its juice into a small bowl.
~8 min
Drying the surface prevents steam, letting the fish sear and brown rather than poach.
-
Heat the non-stick skillet over medium-high heat. Add the asparagus in a single layer and cook until bright green and lightly blistered, about 4 minutes, turning once. Transfer to a plate.
~4 min
Cooking asparagus in a single layer lets it blister and brown instead of steaming.
-
Add the salmon to the hot skillet, skin-side down if it has skin. Sear undisturbed until the flesh is opaque about two-thirds up the side and releases easily, about 4 minutes. Flip and cook 2 minutes more, until the center reaches 63°C/145°F. Transfer to the plate with the asparagus.
~6 min
Searing builds Maillard flavor, and flipping at two-thirds opacity keeps the fish moist.
Searing Get the pan hot and leave the fish undisturbed until it releases on its own; moving it early tears the crust and loses the fond.
-
Lower the heat to medium. Add 15 g butter to the pan and let it melt into the browned bits. Add the minced garlic, 0.5 tsp dried oregano and 0.25 tsp dried thyme. Cook, stirring, until fragrant, about 45 seconds.
~1 min
Melting butter in the fond dissolves the browned bits, and brief cooking keeps garlic sweet, not bitter.
Add the garlic only after the butter has melted and the pan is off high heat — garlic burns in seconds and turns the sauce bitter.
Pan sauce Build the sauce in the same pan, scraping up the fond, then swirl in cold butter off the boil so it emulsifies glossy rather than greasy.
-
Pour in the lemon juice and stir, scraping up the fond. Add the remaining 10 g butter and swirl until the sauce is glossy and slightly thickened, about 1 minute. Taste and add the remaining 0.25 tsp salt if needed.
~1 min
Lemon juice deglazes the pan, and swirling cold butter emulsifies it into a glossy sauce.

-
Return the salmon and asparagus to the pan, spoon the garlic butter sauce over both, and scatter the lemon zest on top. Serve immediately.
