Instructions
-
Whisk 100 g mascarpone, 60 ml cream, 2 tbsp sugar and 1 tbsp cocoa powder in a small bowl until smooth and thick, about 3 minutes.
~3 min
Whisking incorporates air and hydrates the cocoa, while mascarpone's fat stabilizes the cream into a thick, spoonable set.
Chill the bowl and whisk in the freezer for 5 minutes before whipping the mascarpone and cream. Cold cream whips thicker and holds the layers better.
Whisking Whisk in brisk circles until the mixture thickens and leaves faint trails; stop before it looks grainy, which means the cream has over-whipped.
-
Pour 60 ml espresso into a shallow dish and let it cool for 2 minutes so it is warm, not hot.
~2 min
Cooling slightly evaporates harsh heat so the espresso won't instantly dissolve the ladyfingers' structure on contact.
-
Dip 4 ladyfingers one at a time into the espresso for 1 second per side, just until moistened but still holding their shape.
~3 min
A one-second dip lets the porous sponge absorb coffee without fully saturating, so it stays intact for layering.
Dip the ladyfingers for one second per side only. Any longer and they turn to mush and the layers collapse.
-
Layer half the mascarpone cream in a serving glass, add the soaked ladyfingers in one even layer, then spoon the remaining cream on top and smooth the surface.
~4 min
Folding Spoon cream gently over the ladyfingers and smooth without pressing, so you don't crush the soaked sponge or squeeze out air.
-
Dust the top with the remaining 1 tbsp cocoa powder, cover and chill for 20 minutes so the cream firms and the layers set.
~20 min
Chilling firms the mascarpone-cream emulsion and lets the soaked sponge and cream equalize into set layers.
-
Serve cold, spooning down through the cream and softened ladyfingers so each bite gets both.
