Instructions
-
Cut 250 g potatoes into 2 cm cubes. Pat them dry with a clean cloth or paper towel so they crisp instead of steam.
~6 min
Surface moisture steams potatoes instead of letting them crisp, so drying first is essential for browning.
Dry the potato cubes well before oiling: surface moisture is what makes air-fried potatoes pale and soft instead of crisp.
Dicing Cut uniform 1-2 cm pieces so everything cooks at the same rate. Keep the knife vertical and let the blade do the work.
-
Toss the potato cubes in a bowl with 1 tbsp olive oil, 0.25 tsp salt and 0.25 tsp black pepper until evenly coated.
~2 min
Oil and seasoning coat evenly now so every cube browns and tastes the same.
-
Put the potatoes in the air fryer basket in a single layer. Air-fry at 200°C for 15 minutes, shaking the basket halfway, until the edges are golden and a knife slides easily into the largest cube.
~15 min
A single layer lets hot air circulate, so cubes crisp rather than steam; shaking re-exposes pale sides.
Roasting Arrange food in a single layer with space between pieces so hot air reaches every surface. Crowding steams instead of browning.
-
While step 3 cooks
While the potatoes air-fry, dice 60 g chorizo into 1 cm pieces and dice 1 pepper into 1 cm pieces, discarding the seeds and white pith.
~4 min
Dicing Cut uniform 1-2 cm pieces so everything cooks at the same rate. Keep the knife vertical and let the blade do the work.
-
Add the chorizo and pepper to the basket with the potatoes. Air-fry at 200°C for 5 minutes, shaking once, until the chorizo is browned at the edges and the pepper is tender.
~5 min
Cured chorizo only needs browning, and its fat renders to flavor the potatoes and peppers.
If your air fryer runs hot, check the chorizo after 4 minutes; it is cured and only needs to brown, not cook through.
Roasting Arrange food in a single layer with space between pieces so hot air reaches every surface. Crowding steams instead of browning.
-
Crack 2 eggs into a small heatproof dish, add 0.25 tsp salt and beat with a fork. Place the dish in the air fryer basket beside the potatoes and air-fry at 160°C for 7 minutes, until the egg is just set and no longer runny.
~7 min
A lower temperature sets the egg gently so it stays soft instead of turning rubbery.
-
Spoon the set egg onto a plate and mash it roughly with a fork. Pile the hot potato, chorizo and pepper bites alongside and dip them into the egg.
