Instructions
-
Heat the oven to 220°C. Joint the whole chicken into 6 pieces (2 breasts, 2 thighs, 2 drumsticks), or ask the butcher to do it. Pat the pieces dry with kitchen paper.
~10 min
Jointing exposes more surface area and lets each piece cook evenly, while drying the skin helps it crisp rather than steam.
-
Peel the potatoes and cut into 2 cm cubes. Peel the carrots and cut into 1 cm rounds. Toss both in a bowl with 2 tbsp olive oil, 1 tsp salt and 0.5 tsp black pepper. Spread on the baking tray in a single layer.
~10 min
Cutting vegetables into even, small cubes ensures they roast through in the same time as the chicken.
-
Nestle the chicken pieces skin-side up among the vegetables. Drizzle with the remaining 1 tbsp olive oil and season with the remaining 0.5 tsp salt. Roast for 30 minutes.
~30 min
Skin-side up exposes the fat to direct heat so it renders and browns, and spacing pieces prevents steaming.
For crisper potato edges, spread the cubes so they touch the tray in a single layer and leave space between the chicken pieces; steam trapped under the meat makes them soft.
Roasting Roast in a single layer with space between pieces so heat circulates and vegetables brown rather than steam. Crowding the tray is the common mistake.
-
While step 3 cooks
While the chicken roasts, finely chop the garlic. Zest the lemon into a small bowl, then cut the lemon in half and squeeze the juice into the same bowl. Stir in the chopped garlic.
~5 min
Adding raw garlic and lemon at the end keeps their aromatics bright instead of burning during the long roast.
-
Remove the tray from the oven. Spoon the lemon-garlic mixture over the chicken and vegetables. Return to the oven and roast for 20 more minutes, until the chicken reaches 74°C in the thickest part and the potatoes are tender and golden at the edges.
~20 min
Finishing uncovered lets the lemon-garlic glaze caramelise and the potatoes crisp at the edges.
If the lemon-garlic mixture browns too fast in the last 20 minutes, tent the tray with foil and lower the oven to 200°C.

-
Rest the tray loosely covered with foil for 10 minutes before serving, so the juices settle and the chicken stays moist.
~10 min
Resting allows juices to redistribute through the meat so it stays moist instead of running out when carved.
Resting meat Rest loosely tented for about 10 minutes so juices redistribute. Cutting immediately lets them run out and leaves the meat dry.
