Instructions
-
Bring a small pot of water to a rolling boil. Add the 100 g noodles and cook until just tender, about 3 minutes, then drain in a colander and rinse under cold running water until cool. Set aside.
~3 min
Rinsing under cold water stops carryover cooking and washes off surface starch so the noodles stay separate and don't clump.
-
While step 1 cooks
While the noodles cook, peel the 60 g carrots and cut them and the 80 g cucumber into thin matchsticks about 5 cm long. Put both in a small bowl, season with a pinch of the 0.25 tsp salt and a pinch of the 0.125 tsp black pepper, and toss.
~4 min
Julienne Cut carrots and cucumber into even 5 cm matchsticks of uniform thickness. A sharp knife and steady, squared-off pieces keep them crisp and consistent.
-
Press the 150 g tofu block gently with paper towels to remove surface water, then cut it into 2 cm cubes. Pat the cubes dry again so they brown instead of steam.
~2 min
Drying the tofu's surface removes moisture that would otherwise turn to steam and block the crust from browning.
-
Heat the 1 tbsp vegetable oil in a non-stick frying pan over medium-high heat until it shimmers. Add the tofu cubes in a single layer and sear, turning every 1 to 2 minutes, until golden on at least three sides, about 6 minutes. Season with the remaining salt and black pepper.
~8 min
A shimmering pan and single layer give each cube direct contact heat, driving Maillard browning for a golden crust.
Pat the tofu dry twice, once before cutting and once after, so the surface is bone dry when it hits the pan. Any moisture left on the cubes turns to steam and stops the golden crust from forming.
Searing Pat the tofu bone dry and wait for the oil to shimmer before adding it. Crowding the pan or moving the cubes too often steams them grey instead of browning.
-
While step 4 cooks
While the tofu sears, spoon the 2 tbsp peanut sauce into a small bowl. Stir in 1 tbsp hot water from the noodle pot, a few drops at a time, until the sauce is smooth and pourable.
~2 min
Hot water thins the thick peanut paste so it coats and clings to the noodles instead of sitting in a clump.
If the peanut sauce tightens as it sits, loosen it with another teaspoon of hot water rather than more oil, which keeps the dressing light enough to coat the noodles evenly.
-
Pile the cooled noodles in a bowl, add the dressed cucumber and carrots, and lay the golden tofu on top. Spoon the peanut sauce over everything and serve right away.
