Instructions
-
Peel the potatoes and cut them into 1 cm dice. Finely chop the onion. Pat the potatoes dry with a paper towel so they brown instead of steam.
~6 min
Drying the potatoes removes surface moisture so they brown and crisp in the pan instead of steaming.
Dicing Cut potatoes into even 1 cm cubes so they cook at the same rate; uneven pieces leave some raw and some mushy.
-
Heat 1.5 tbsp vegetable oil in a large non-stick skillet over medium-high heat. Add the potatoes in a single layer, season with 0.25 tsp salt, and cook undisturbed for 4 minutes until the bottoms are golden.
~4 min
A single layer and undisturbed contact with the hot pan maximizes browning through the Maillard reaction.
Let the potatoes sit undisturbed in the first minutes of cooking; that untouched contact with the hot pan is what builds the golden crust.
If your skillet is smaller than 25 cm, cook the potatoes in two batches so they brown rather than steam.
Sautéing Keep the heat medium-high and stir only occasionally; constant stirring prevents the golden crust from forming.
-
Stir the potatoes, add the onion and remaining 0.5 tbsp vegetable oil, and cook 4 minutes more, stirring occasionally, until the potatoes are tender and browned on most sides and the onion is golden. Season with the remaining 0.25 tsp salt and the black pepper.
~4 min
Adding onion later prevents it from burning while the denser potatoes finish cooking through.
Sautéing Keep the heat medium-high and stir only occasionally; constant stirring prevents the golden crust from forming.
-
Push the hash to one side of the skillet. Crack the eggs into the clear space and cook 3 to 4 minutes until the whites are fully set and the yolks are still soft. Slide the eggs onto the hash and serve.
~4 min
Cooking eggs in the clear space lets the whites set fully while the yolks stay soft.
