Instructions
-
Pat the chicken thighs dry and cut them into 3 cm pieces. Dice the chorizo into 1 cm cubes and the peppers into 1.5 cm pieces. Measure the rice, peas, smoked paprika, salt and black pepper.
~15 min
-
Heat the olive oil in a large heavy pot over medium-high heat. Add the chicken thighs in a single layer and sear until golden brown on all sides, about 6 minutes. Transfer the chicken to a plate.
~6 min
Searing at high heat triggers Maillard browning, creating flavor compounds that deepen the soup's base.
Searing the chicken before simmering builds the browned base that makes this water taste deep; do not skip it or crowd the pot.
Searing Dry the chicken and leave space between pieces; a crowded pot steams instead of browning. Wait for a deep golden crust before flipping.
-
Add the chorizo to the pot and cook until it releases its red oil and crisps at the edges, about 3 minutes. Add the peppers and cook until softened, about 5 minutes. Stir in the smoked paprika and cook for 30 seconds until fragrant.
~8 min
Rendering chorizo melts its fat and releases paprika-infused oil, which seasons everything cooked in it afterward.
Chorizo carries the smoky, savory backbone here, so let it render fully before the peppers go in. That red oil seasons the whole soup.
Rendering fat Cook chorizo over medium heat until the red oil pools and edges crisp. Rushing it leaves the fat unrendered and the flavor flat.
-
Return the chicken thighs to the pot along with 1500 ml water, 1 tsp salt and 0.5 tsp black pepper. Bring to a gentle simmer, cover and cook for 15 minutes so the water takes on the smoky chorizo flavor.
~15 min
A gentle covered simmer lets collagen soften and the chorizo's smoky flavor infuse the water without evaporating it.
-
Stir in the rice, cover and simmer until the rice is tender and the liquid has thickened slightly, about 15 minutes. If the rice is still firm, add 2 tbsp hot water, cover and steam for 3 more minutes off the heat.
~15 min
Rice absorbs the seasoned broth as it cooks, thickening the soup and concentrating its smoky flavor.
-
Stir in the peas and cook uncovered for 3 minutes until bright green and tender. Taste and adjust the salt. Ladle into bowls, making sure each gets chicken, chorizo and rice.
