Instructions
-
Dice the onion and peppers into 1 cm pieces. Cut the ham into 1 cm squares. Grate the cheese.
~4 min
-
Heat the olive oil in a non-stick frying pan over medium-high heat. Add the onion and peppers and cook, stirring, until softened and lightly golden at the edges, about 4 minutes.
~4 min
Cooking the vegetables first softens them and drives off moisture so the omelette does not turn watery.
Sautéing Keep the heat medium-high and stir so the vegetables soften and color evenly; if they steam or brown too fast, the pan is too hot.
-
While step 2 cooks
Add the ham and cook for 1 minute until it starts to brown. While the vegetables cook, crack the eggs into a bowl, add the salt and black pepper, and beat with a fork until smooth.
~1 min
Briefly browning the ham renders its fat and concentrates flavor before the eggs are added.
-
Spread the ham and vegetables evenly in the pan. Pour the beaten eggs over the top and reduce the heat to medium-low. Cook until the edges are set and the center is almost firm, about 3 minutes.
~3 min
Lowering the heat lets the eggs set gently, keeping the omelette tender instead of rubbery.
Let the omelette set undisturbed for the first minute so the base firms up before you touch it; this keeps the fold clean and the center tender.
-
Sprinkle the grated cheese over the omelette. Cover the pan and cook until the cheese melts and the eggs are fully set, about 2 minutes. Fold the omelette in half and slide it onto a plate.
~2 min
Covering traps steam, which melts the cheese and sets the top of the eggs without flipping.
If the center still looks wet after the cheese melts, cover and cook 30 seconds more rather than turning up the heat, which would toughen the eggs.
Folding Fold once the eggs are just set and the cheese melted; slide a spatula under one half and tip it over gently so the omelette does not tear.
