Instructions
-
Bring a large pot of water to a rolling boil. Add the noodles and cook until just tender, about 3 to 4 minutes, then drain in a colander.
~4 min
Cooking noodles just to tender keeps them from turning mushy when they finish in the hot sauce.
Cook the noodles just shy of tender before draining. They finish in the sauce, so slightly firm noodles soak up the soy glaze instead of turning soft.

While step 1 cooks
While the noodles boil, slice the peppers into 1 cm strips, discarding the seeds and core. Pat the beef strips dry with paper towel and season with 0.25 tsp salt and 0.25 tsp black pepper.
~4 min
Drying the beef prevents surface moisture from steaming the meat, so it browns instead of stewing.
-
While step 1 cooks
Stir 3 tbsp soy sauce with 60 ml water in a small bowl to make the sauce.
~1 min
-
Heat 1 tbsp vegetable oil in a large non-stick pan over high heat until it shimmers. Add the beef strips in a single layer and sear without moving for 1 minute, then stir and cook until browned but still juicy, about 2 minutes more. Transfer the beef to a plate.
~3 min
A single layer and no moving for one minute lets the beef develop a browned crust through the Maillard reaction.
Pat the beef strips very dry before searing: surface moisture steams the meat and stops it browning, so the pan stays hot and the strips get color fast.
Searing Get the pan shimmering hot, lay beef in one layer, and don't move it for a full minute. Crowding or flipping early steams the meat and prevents browning.
-
Add the peppers to the same pan and stir-fry over high heat until tender-crisp with a few charred edges, about 3 minutes.
~3 min
High heat and constant tossing char the peppers while keeping them tender-crisp, not limp.
Stir-frying Keep the pan very hot and toss the peppers constantly so they blister at the edges but stay crisp. Stop as soon as they are tender-crisp to avoid sogginess.
-
Pour in the soy sauce mixture and let it bubble for 30 seconds, scraping up the browned bits. Return the beef and any juices, add the drained noodles, and toss for 1 minute until everything is coated and the beef is just heated through.
~1 min
Scraping the browned bits into the bubbling sauce dissolves them, adding savory depth to the glaze.
