Instructions
-
Pat the chicken thighs dry with paper towels and season both sides with 0.5 tsp salt and 0.25 tsp black pepper. Finely chop the onion. Zest the lemon into a small bowl, then juice it into another bowl.
~10 min
Drying the skin removes surface moisture so it browns and crisps instead of steaming; salting early seasons the meat.
-
Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Lay the chicken thighs skin-side down in a single layer and sear undisturbed for 6 minutes, until deeply golden. Flip and sear 2 minutes more, then transfer to a plate.
~8 min
Searing skin-side down in a hot pan triggers Maillard browning, building deep flavor and crisp texture.
Let the chicken thighs sit at room temperature for 10 minutes before searing so they cook evenly and the skin crisps instead of steaming.
Searing Pat the skin bone-dry and leave it undisturbed until it releases easily and turns deep gold; moving it early tears the crust.
-
Reduce heat to medium. Add the remaining 1 tbsp olive oil and the chopped onion to the skillet. Cook for 5 minutes, scraping up the browned bits, until the onion is soft and golden. Stir in 0.5 tsp cinnamon and 1 tsp coriander and cook for 45 seconds, until fragrant.
~5 min
Blooming spices in hot oil dissolves their fat-soluble aromas, making them taste fuller and less raw.
Deglazing Pour liquid into the hot pan and scrape the browned bits up as it bubbles; those fond bits are concentrated flavor for the sauce.
-
Pour 150 ml water into the skillet and scrape the bottom clean. Return the chicken thighs to the pan, cover, and simmer gently for 12 minutes, until the chicken reaches 74°C/165°F and the sauce has thickened slightly.
~12 min
Covered simmering gently cooks the chicken through while the liquid reduces into a clingy sauce.
If the sauce looks thin after simmering, remove the chicken and boil the liquid for 1 to 2 minutes to reduce it before adding the lemon and olives.

While step 4 cooks
While the chicken simmers, bring the remaining 150 ml water to a boil in a small kettle. Put the couscous in a heatproof bowl, pour over the boiling water, add 0.5 tsp salt and 0.25 tsp black pepper, cover, and let stand for 5 minutes. Fluff with a fork.
~5 min
Boiling water hydrates the couscous by absorption; covering traps steam so grains plump evenly.
-
Stir the olives, lemon zest and lemon juice into the skillet. Taste the sauce and adjust salt. Spoon the chicken and sauce over the couscous and serve.
~3 min
Adding lemon and olives off the heat keeps their bright acidity and prevents bitterness from overcooking.
