Instructions
-
Rinse the quinoa under cold running water in a fine sieve for 30 seconds, until the water runs clear, then drain well.
~2 min
Rinsing removes bitter saponins from the quinoa's surface, preventing a soapy taste in the final dish.
-
Put the quinoa and 240 ml water in a small saucepan with a lid and add 0.25 tsp salt. Bring to a boil over high heat, then cover, lower the heat and simmer gently for 15 minutes, until the water is absorbed and the grains are tender with a visible white curl. Take the pan off the heat and leave it covered to steam for 5 minutes.
~20 min
The 1:2 quinoa-to-water ratio and covered simmer allow absorption; steaming off-heat lets grains finish cooking gently without scorching.
Quinoa is done when the grain has uncurled into a little white spiral. If it is still crunchy when the water is gone, add 2 tbsp hot water, cover and steam 3 more minutes off the heat.
Simmering Keep the liquid at a gentle bubble, not a rolling boil, so the quinoa cooks evenly without burning. The cue is absorbed water and tender grains with a white curl.

While step 2 cooks
While the quinoa simmers, drain the chickpeas and pat them dry. Cut the roasted peppers into 2 cm strips. Zest the lemon into a small bowl, then squeeze in 2 tbsp lemon juice, add the olive oil, the remaining 0.25 tsp salt and the black pepper, and whisk with a fork.

-
Heat a large non-stick frying pan over medium-high heat. Add the chickpeas in a single layer and cook for 6 to 8 minutes, shaking the pan every couple of minutes, until they are dry, blistered and lightly golden in spots.
~8 min
Drying the chickpeas prevents steaming; high heat then blisters and browns them for crisp texture and deeper flavor.
Pat the chickpeas completely dry before they hit the pan. Surface moisture steams them and they stay soft; dry chickpeas blister and turn golden instead.
Sautéing Use medium-high heat and shake the pan rather than stirring constantly. The cue is blistered, golden chickpeas and just-wilted spinach; avoid overcrowding, which steams instead of browns.
-
Add the roasted peppers to the pan and stir for 1 minute to warm them through. Add the spinach in handfuls and toss for 1 to 2 minutes, until just wilted but still bright green.
~3 min
Adding spinach last and tossing briefly wilts it without overcooking, preserving bright color and fresh flavor.

-
Fluff the quinoa with a fork and tip it into the pan. Pour over the lemon dressing and toss everything together for 1 minute, until evenly coated. Crumble the feta over the top, fold once, and serve warm.
~1 min
Fluffing with a fork separates grains instead of crushing them; folding feta gently keeps its crumbles intact.
