Instructions

  1. Light the barbecue and let it come up to a medium-hot fire, about 10 minutes, until you can hold your hand 10 cm above the grate for only 3 to 4 seconds. While it heats, shuck the corn on the cob, pull off every silk thread, and cut the lime in half. Zest one half of the lime into a small heatproof bowl, then squeeze both halves over the zest and set the bowl aside. Crumble the feta into a separate small bowl.

    ~10 min

  2. Put the butter in the small heatproof bowl with the lime zest and juice and set it on the cooler edge of the barbecue grate. Let it melt, about 2 minutes, then stir in the salt and black pepper. Move the bowl off the heat and keep it warm.

    ~2 min

  3. Lay the corn on the barbecue grate over direct heat. Grill, turning with tongs every 2 to 3 minutes, until the kernels are charred in spots and a kernel pierces easily with the tip of a knife, 8 to 10 minutes total.

    ~13 min

  4. Brush the hot corn all over with the melted lime butter, turning the cob so every side is coated. Sprinkle over the crumbled feta and press it lightly so it sticks, then serve straight away while the corn is still hot.
