Instructions
-
Heat the grill to high. Crack the eggs into a bowl, add 0.25 tsp salt and 0.25 tsp black pepper, and beat with a fork until evenly combined.
~3 min
Beating the eggs with salt and pepper distributes seasoning evenly and breaks up the whites so the frittata sets uniformly.
-
Slice the sausages into 1 cm rounds. Heat 1 tbsp olive oil in a large oven-safe frying pan over medium-high heat. Add the sausages and cook until browned on both sides, about 6 minutes.
~6 min
Browning the sausages in oil creates Maillard flavour compounds and renders fat that will flavour the whole dish.
Searing Get the pan hot before adding sausages and leave them undisturbed until they release easily; moving them too soon prevents browning.
-
While step 2 cooks
While the sausages brown, roughly chop the tomatoes into 2 cm pieces and drain the beans.
~3 min
-
Add the tomatoes and beans to the pan, season with the remaining 0.25 tsp salt, and cook until the tomatoes soften and release their juices, about 4 minutes.
~4 min
Cooking the tomatoes and beans until the tomatoes release their juices concentrates flavour and prevents a watery frittata.
Drain the beans well before adding them; excess liquid steams the eggs instead of letting them set firm.
-
Pour the beaten eggs over the sausage and bean mixture, tilting the pan to spread them evenly. Cook without stirring until the edges are set and the centre is still slightly loose, about 4 minutes.
~4 min
Cooking without stirring lets the bottom set into a solid base while the centre stays loose enough to finish under the grill.
-
Transfer the pan to the grill and cook until the top is set and lightly golden, about 5 minutes. Cut into wedges and serve with the bread.
~5 min
Grilling the top sets the loose eggs and browns the surface without overcooking the base.
Let the frittata sit in the pan for a minute after grilling so the eggs finish setting and the wedges lift out cleanly.
Grilling Keep the pan a safe distance from the grill element and watch closely; the top should set and turn lightly golden without burning.
