Instructions

  1. Toast the 2 slices of bread until golden and crisp, either in a toaster or under a hot oven grill for 2 to 3 minutes per side. Set them on a plate.

    ~6 min

  2. Lay the 2 slices of bacon in a cold frying pan and set it over medium heat. Cook until the fat renders and the bacon is browned and crisp, about 4 minutes per side. Lift the bacon onto the toast, leaving the fat in the pan.

    ~8 min

  3. While step 2 cooks

While the bacon cooks, halve the 6 cherry tomatoes. Add them cut side down to the hot bacon fat and cook until they soften and char at the edges, about 3 minutes. Spoon them over the toast.

    ~3 min

  4. Add the 1 tsp olive oil to the pan. Crack in the 2 eggs, season with half the salt and half the black pepper, and fry until the whites are fully set and the yolks are still soft, about 3 minutes.

    ~3 min

  5. While step 4 cooks

While the eggs fry, scoop the flesh of the half avocado into a small bowl. Mash it with a fork and stir in the remaining salt and black pepper.

    ~2 min

  6. Spread the mashed avocado over the toast, top with the bacon, the blistered cherry tomatoes and the fried eggs. Eat straight away while the yolk is runny.
