Instructions
-
Put 250 ml water in a small saucepan and sprinkle 3 tsp gelatine evenly over the surface. Let it stand for 5 minutes until the gelatine swells and looks spongy.
~5 min
Sprinkling gelatine over cold water lets each grain hydrate and swell separately, preventing lumps when heated.
Sprinkle the gelatine over cold water and let it swell before heating; adding it to hot liquid straight away makes lumps that never dissolve.
-
Warm the saucepan over low heat, stirring constantly, for about 2 minutes until the gelatine dissolves completely and the liquid is clear with no visible grains. Do not let it boil.
~2 min
Gentle heat dissolves the swollen gelatine without boiling, which would destroy its gelling strength and clarity.
-
Add 200 g of the berries and 1 tbsp of the honey to the warm gelatine liquid. Crush the berries roughly with the back of the spoon and stir for 2 minutes until they release their juice and the mixture is evenly coloured.
~2 min
Crushing the berries releases their juice and pectin, giving the gelatin a natural fruit colour and flavour.
Poaching Keep the gelatine liquid barely warm, not boiling, while crushing berries; high heat weakens the set.
-
Divide the berry mixture between 4 small cups. Refrigerate for at least 4 hours, until fully set and no longer liquid when the cup is tilted.
~240 min
Chilling lets the gelatine network set into a soft solid; tilting tests that it is no longer liquid.
If the set cups look loose after 4 hours, chill them another hour before topping; gelatine firms gradually as it cools.
-
While step 4 rests
While the cups set, whisk 500 g yogurt with the remaining 2 tbsp honey in a bowl until smooth. Cover and refrigerate until needed.
~4 min
Whisking Whisk in a circular motion to blend honey evenly into yogurt; stop as soon as it is smooth to avoid thinning it.
-
Spoon the honeyed yogurt over the set berry cups and scatter the remaining 100 g berries on top. Serve cold.
