Instructions
-
Put 150 g oats, 120 g peanut butter, 60 g honey, 0.25 tsp salt and 2 tbsp water in the mixing bowl. Stir with the wooden spoon until no dry oats remain and the mixture pulls together into a thick, slightly sticky mass.
~5 min
Mixing hydrates the oats and dissolves the honey, creating a sticky matrix that binds the balls without baking.
-
Fold in 60 g chocolate chips until evenly scattered through the mixture. If it feels crumbly, add 1 tsp water at a time until it holds when squeezed.
~3 min
Chocolate chips add solid pieces that stay intact, while extra water hydrates oats to prevent crumbling.
If the mixture crumbles instead of holding, it is the peanut butter that is too dry: add water 1 tsp at a time rather than more honey, which would make the balls sticky and soft.
Folding Use a gentle lifting and turning motion to incorporate chocolate chips without crushing them or deflating the mixture.
-
Scoop heaped tablespoons of the mixture and roll each between your palms into a 3 cm ball. You should get 12 balls. Work with slightly damp hands if the mixture sticks.
~10 min
Compressing the mixture into balls removes air pockets, so they hold together and have a uniform texture.
-
Line the baking sheet with parchment paper and set the balls on it, spaced apart. Chill in the refrigerator for 30 minutes so they firm up and hold their shape.
~30 min
Chilling firms the peanut butter and honey, helping the balls set and hold their shape.
-
Eat straight from the fridge. Store the balls in a covered container in the refrigerator for up to 5 days.
