Instructions
-
Zest the orange into a mixing bowl, then halve it and squeeze 2 tbsp of juice into the same bowl. Add the ricotta, honey, a pinch of salt and a pinch of black pepper. Whisk firmly for 2 minutes until the ricotta turns smooth, glossy and slightly aerated.
~2 min
Whisking aerates the ricotta and the acid in orange juice helps it turn smooth and glossy rather than grainy.
Whisking Whisk firmly in one direction for the full 2 minutes; stop when the ricotta looks glossy and holds soft peaks, not before, or it stays grainy.
Zesting Grate only the orange-colored surface, pressing lightly; the white pith underneath is bitter and will ruin the dessert.
-
Chop the pistachios roughly.
~2 min
-
Trim the figs and cut them into wedges. Peel the zested orange half if you like, then slice the segments into bite-size pieces.
~4 min
-
Spoon the whipped ricotta into two bowls, spreading it in a swoosh. Arrange the figs and orange pieces over the top and scatter the pistachios across.
~2 min
-
Drizzle the remaining honey over each bowl and finish with a last crack of black pepper. Serve right away.
