Instructions
-
Spoon the greek yogurt into a small bowl. Stir in the chia seeds and 1 tsp of the honey until evenly combined.
~2 min
Stirring chia seeds into yogurt lets them hydrate evenly, so the soluble fiber gels and thickens the base without clumps.
If the berries are very tart, mash a few of them into the yogurt with the back of a spoon to sweeten the base naturally.
Folding Use a gentle folding motion from the bottom up to combine chia and honey without deflating the yogurt's creamy texture. Stop as soon as streaks disappear to avoid overmixing.
-
Let the bowl stand so the chia seeds swell and the yogurt thickens, about 5 minutes.
~5 min
The 5-minute rest gives chia seeds time to absorb liquid and swell, turning loose yogurt into a thick, spoonable set.
-
While step 2 waits
While the yogurt thickens, halve or quarter any large mixed berries so they are bite-sized, leaving small ones whole.
~3 min
-
Scatter the mixed berries over the thickened yogurt, then spoon the granola on top.
