Instructions
-
Put 4 dates in the small bowl, add 2 tbsp water and let them soak for 10 minutes until soft.
~10 min
Soaking softens dates so they mash into a smooth paste, preventing hard bits in the bites.
-
While step 1 waits
While the dates soak, break 20 g dark chocolate into the larger bowl. Pour 250 ml hot tap water into a third bowl, set the chocolate bowl inside it and stir until the chocolate is fully melted and smooth.
~5 min
A water bath gently melts chocolate; direct heat can scorch it, causing a grainy texture.
-
Drain the dates, keeping them in the small bowl, and mash them with the fork into a thick paste. Stir in 2 tbsp peanut butter and the melted dark chocolate until evenly combined.
~4 min
-
Stir 40 g oats, 1 tbsp coconut and 1 pinch salt into the chocolate mixture until it forms a stiff, sticky dough.
~2 min
Oats absorb moisture and bind the dough, while salt balances sweetness and enhances chocolate flavor.
Folding Fold oats and coconut into the chocolate mixture gently until just combined; overmixing can make the dough tough and dense.
-
Roll the dough into 4 equal balls, about 3 cm across, and place them in the airtight container.
~2 min
If the dough feels too sticky to roll, chill it for 5 minutes first; cold peanut butter firms up fast and the balls hold their shape.
Press a few extra coconut flakes onto the outside of each bite before chilling for a crisp edge that contrasts the fudgy center.
-
Chill the bites in the fridge for 30 minutes until firm and set.
~30 min
Chilling firms the peanut butter and chocolate, helping the bites hold their shape.
